The -800 is in the process of getting the new first class seats. New vs. old seats are a big difference. According to Alaska Fleet Status, only 3 of the -800 have completed the retrofit. I do not believe any of the -900/ER have the new seats (but MAX does). For me, which leg depends on the timing.

The 600 only comes with one variant. The 900 has two. The 800 comes with four. The 800 is by far the most used variant of the 737, and that is a important thing if you want to simulate real world routes. It all depends on what you want to do on the simulator.
